That was a meat-making machine, which you accidentally turned on as you investigate and get your hair stuck inside it. Thinking quickly, you turn it off, though you do get some hair ripped off your scalp. Painful, but it's better than being turned into Mila Meat.

Looking at the hand itself, it does look like it was cleanly cut off. You head into Rambo's kitchen and find a kitchen knife inside, which you lost control and stabbed your own hand while it rests on the counter.
