Science doesn't go horribly wrong, normally. Like, hell, the worst disasters are arcane science ones, and even those can usually be contained with proper safety procedures. In fact, I can't think of any time that science went wrong enough to justify stupid "don't science here" laws. Also, crossbreeds? Really? That's your issue? A Cow-goat would be very practical. You could call it a Coat or a Gow and it would produce substantial amounts of milk, be a decent meat animal, and also be optimized for hilly environments. I mean, that's basically a Yak but for hot weather. And who wouldn't want a Yak? They're incredibly functional livestock. Like, not horse hyper-multipurpose-functional or rabbit cheap-as-fuck, but generally pretty good.
